Herbed New Potatoes
These herbed potatoes get their Mediterranean flavor from a combination of olives, mint, and lemon zest. Serve them with a rich lamb stew and your favorite crusty bread.
Ingredients
For 6 people
- 3 teaspoon(s) sea salt
- 5 1/4 cup(s) new potatoes, halved
- 4 tablespoon(s) olive oil
- 4 ounce(s) Kalamata olives, pitted and sliced
- 1/4 cup(s) fresh mint, chopped
- 1/2 teaspoon(s) freshly ground black pepper
- 1 teaspoon(s) lemon zest
Directions
In a large saucepan, add 2 tsp. of the salt to 3 quarts of water. Add the potatoes and bring to a boil. Cook until tender, 20 to 25 minutes. Drain the potatoes well. Heat the oil in a large skillet over medium-high heat. Add the potatoes, stirring well to coat. Cook until golden, about 5 minutes per side. Add the olives and mint and toss together. Season with the pepper, zest, and the remaining salt.
