Holiday Rolls

Don't be a chicken -- give these gourmet rolls a try. They're so good they give new meaning to the term poultry in motion.

Holiday Rolls


For 8 people

  • 1 tablespoon(s) olive oil
  • 4 chicken breast fillets cut into thin strips
  • 2 cup(s) chicken broth
  • 1 cup(s) rice
  • 1 16 oz. can refried beans
  • 8 ounce(s) pkg. of cream cheese, softened
  • 8 burrito size flour tortillas


  1. In a large skillet, heat oil; stir fry chicken until lightly browned. Add broth and rice; bring to a boil. Reduce heat, cover and simmer for 20 minutes or until rice is tender. Heat refried beans according to label directions. Divide cheese into 8 equal portions; spread one portion over tortilla. Layer cheese with about 3 tbsp. beans and 1/3-cup chicken mixture. Fold in sides of tortillas; roll up. Repeat steps with remaining ingredients.
