Hot Chili Macaroni

Ingredients
For 4 people
- 1 tablespoon(s) corn oil
- 1/4 cup(s) diced red bell pepper
- 1/2 cup(s) sweet corn kernels
- 2 ounce(s) diced red onions
- 6 teaspoon(s) finely chopped garlic
- 2 cup(s) cooked macaroni
- 6 Green chilies, roasted, seeded, peeled and pureed (about 3/4 cup)
- 2/3 cup(s) grated hot pepper Jack cheese
- 8 tablespoon(s) heavy cream
- 1/8 teaspoon(s) salt, to taste
- 1/8 teaspoon(s) freshly ground black pepper, to taste
Directions
In a large saucepan, heat the oil over medium-high heat. Add the red bell pepper, corn, onion, and garlic; sauté until the vegetables are softened, about 5 minutes. Add the macaroni, Green chilies puree, and cheese; stir until well blended. Fold in heavy cream, season with salt and pepper to taste and serve immediately.
