Italian Pea and Basil Soup

Italian Pea and Basil Soup

Ingredients

For 4 people

  • 5 tablespoon(s) olive oil
  • 2 large onions, chopped
  • 1 celery stick, chopped
  • 1 carrot, chopped
  • 2 garlic cloves, finely chopped
  • 3 1/2 cup(s) frozen peas
  • 3 3/4 cup(s) vegetable broth
  • 1 cup(s) fresh basil leaves, roughly torn, plus extra to garnish
  • 1 freshly grated Parmesan cheese, to serve

Directions

Heat oil in a large saucepan and add onions, celery, carrot and garlic. Cover the pan and cook over a low heat for 45 minutes or until the vegetables are soft, stirring occasionally to prevent sticking. Add peas and broth to the pan and bring to a boil. Reduce heat, and basil and seasoning, then simmer for 10 minutes. Spoon the soup into a food processor or blender and process until the soup is smooth. Ladle into warm bowls, sprinkle with grated Parmesan cheese and garnish with basil.
Try herbs like mint, parsley and chives in place of basil for some delightful variations.
