Kale and Adzuki Beans
Think you've bean there, done that when it comes to side dishes? You haven't until you've sampled this delicious kale and adzuki bean concoction. It's not just good for you. It's great tasting as well.
Ingredients
For 6 people
- 1 cup(s) uncooked adzuki beans
- 1 tablespoon(s) olive oil
- 2 cloves garlic, peeled and crushed
- 6 cup(s) roughly chopped kale
- 2 tablespoon(s) water
- 1/4 cup(s) tamari
- 1 teaspoon(s) ground cumin
- 1 teaspoon(s) ground coriander
- 1 dash(es) salt
- 1 dash(es) pepper
Directions
Place adzuki beans in a medium saucepan with enough water to cover. Bring to a boil, reduce heat, and simmer 30 to 45 minutes, until tender. Heat olive oil in a medium skillet over medium heat, and sauté garlic about 1 minute. Mix in kale and 2 tbsp. water. Season with tamari, cumin, and coriander. Thoroughly blend in adzuki beans. Reduce heat to low, cover, and simmer about 20 minutes, until kale is tender. Season with salt and pepper.
