Lemon Coconut Rice

When life gives you lemons, make this lemon coconut rice. A few ingredients will quickly transform this dinner-time staple into a family favorite. It's a sweet treat that's sure to satisfy.

Lemon Coconut Rice


For 4 people

  • 2 cup(s) jasmine rice, rinsed until the water runs almost clear (2-3 times)
  • 2 1/2 cup(s) stock or water
  • 1 teaspoon(s) salt
  • 14 ounce(s) coconut milk
  • 1 Juice and zest of lemon


In a pot with a tight-fitting lid, combine all ingredients. Bring to a boil over medium-high heat, cooking uncovered; stir occasionally. When rice boils, cover pot and reduce heat to low. Cook 15 minutes. Remove from heat and let sit with lid on for 10 minutes.
