Lemon Vinaigrette Salad
Light Boston lettuce combines with tomato and cucumber slices that get zing from a simple lemon and dill vinaigrette.
Ingredients

- 1 head Boston lettuce, separated into leaves
- 1 large tomato, sliced
- 1 small cucumber, sliced
- 1/4 cup(s) olive oil
- 2 tablespoon(s) lemon juice
- 2 teaspoon(s) snipped fresh dill
- 1/4 teaspoon(s) salt
- 1/8 teaspoon(s) pepper
Directions
Arrange the lettuce on four salad plates. Top with tomato and cucumber slices. In a jar with a tight-fitting lid, combine the oil, lemon juice, dill, salt and pepper; shake well. Drizzle over salads.
