Lentil Soup with Curry
Lick your lips and get them ready to taste some lentils like they have never had before. Add some spice to your lentils and serve this flavorful soup with sourdough bread. It's a great way to warm up on a cold day.
Ingredients
For 8 people
- 1 tablespoon(s) oil
- 1 cup(s) chopped onion
- 2 garlic cloves, crushed
- 2 tablespoon(s) curry powder
- 4 cup(s) chicken broth
- 20 floz water
- 2 cup(s) canned tomatoes, chopped
- 2 cup(s) lentils, uncooked
- 1 cup(s) carrots, finely chopped
- 4 floz red wine
- 16 tablespoon(s) parsley, chopped
- 1 dash(es) salt, to taste
- 1 dash(es) pepper to taste
Directions
In large saucepan, heat oil; sauté onion and garlic until soft. Stir in curry powder; sauté 1 minute. Add broth, water, tomatoes, lentils, carrots and wine. Simmer, uncovered until lentils are cooked, about 45 minutes. Stir in parsley and simmer for 5 minutes.
