Lobster Napoleon

  • 2 slices shallot
  • 1 tablespoon(s) smooth mustard
  • 20 Mandarin orange wedges
  • 1/4 cup(s) orange juice
  • 1/8 teaspoon(s) sugars, to taste
  • 1/2 cup(s) extra virgin olive oil
  • 1 Spring mix lettuce
  • 2 2-inch-long slices mango
  • 2 lobster claws, meat
  • 6 thick slices avocado



1)-For dressing, mix first eight ingredients; set aside.
2)-Put greens on plate, then layer half the mango, half the lobster meat and half the avocado; repeat layers.
3)-Drizzle dressing over all.
