Low-Fat Potato Salad

Ingredients
For 1 people
- 3 medium potatoes
- 1/3 cup(s) chicken stock
- 1/4 cup(s) plain yogurt
- 3 tablespoon(s) green pepper, minced
- 1 hard-cooked egg, chopped
- 1/3 cup(s) onion, minced
- 1/4 teaspoon(s) celery seed
- 1/4 teaspoon(s) parsley flakes
- 1 salt and pepper, to taste
Directions
Cook potatoes in skins and cut into bite-size pieces. Allow to cool until just warm. Add remaining ingredients and toss lightly until well mixed. Chill and serve.
