Low-Fat Potato Salad

Low-Fat Potato Salad


For 1 people

  • 3 medium potatoes
  • 1/3 cup(s) chicken stock
  • 1/4 cup(s) plain yogurt
  • 3 tablespoon(s) green pepper, minced
  • 1 hard-cooked egg, chopped
  • 1/3 cup(s) onion, minced
  • 1/4 teaspoon(s) celery seed
  • 1/4 teaspoon(s) parsley flakes
  • 1 salt and pepper, to taste


Cook potatoes in skins and cut into bite-size pieces. Allow to cool until just warm. Add remaining ingredients and toss lightly until well mixed. Chill and serve.
