Mediterranean Meatballs
Finding a recipe for Mediterranean meatballs that tops this one will be a real feta. Enjoy these bite-sized bits of beef as an appetizer or as a meal with a side of lemon rice.
Ingredients
For 8 people
- 1/2 cup(s) chopped parsley
- 1 teaspoon(s) dried oregano
- 2 tablespoon(s) finely chopped onion
- 16 ounce(s) ground beef
- 1/2 cup(s) crumbled feta cheese
- 113 grams pitted green olives, coarsely chopped (0.5 cup)
- 2 eggs
Directions
Combine all the ingredients with your hands and shape into 16 meatballs. Place the meatballs about 2-inches apart on a baking sheet and broil, about 3-inches away from the heat until browned on top. Turn over and broil on the other side. You don't really need any salt in this recipe as the feta and olives provide enough. You can also fry the meatballs in olive oil, but I think broiling is easier.
