Meringue with Strawberry

When most people think of meringue, lemon usually comes to mind. But here is a sweet twist on that classic. Strawberry meringue and it is every bit as good. It's traditional meringue topped with strawberries and ice cream. It will become a new classic.

Meringue with Strawberry


For 4 people

  • 8 egg whites
  • 1 1/2 cup(s) sugar
  • 1/4 teaspoon(s) salt
  • 1 teaspoon(s) vanilla
  • 2 cup(s) strawberries, sliced
  • 1 vanilla ice cream


Place the egg whites and salt in the mixer's bowl. Whip until it begins to thicken. With the mixer running, slowly add the sugar and vanilla. Beat until firm. Pre-heat the oven to 250 degrees. Cover a cookie sheet with baker's parchment paper and place mounds of approximately two tbsp. of the mixture a few inches apart. Cook for about one hour and cool. Use immediately or store, covered, at room temperature. Top with ice cream and sliced strawberries.
