One Pot Jambalaya
You don't have to head down to the bayou to enjoy a real Cajun dish. This jambalaya is smokin hot. In fact, you'll be swamped with compliments on this gourmet grub.
Ingredients
For 4 people
- 12 ounce(s) medium shrimp, peeled deveined uncooked
- 1 large onion, chopped
- 1 cup(s) medium green bell pepper, chopped
- 2 medium celery ribs, chopped
- 3 garlic cloves, finely chopped
- 28 ounce(s) can diced tomatoes, undrained
- 3 1/2 ounce(s) spicy smoked sausage, fully cooked and sliced
- 1 tablespoon(s) parsley flakes
- 1/2 teaspoon(s) dried thyme leaves
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) pepper
- 1/4 teaspoon(s) red pepper sauce
- 4 cup(s) cooked rice
Directions
Mix all ingredients except shrimp and rice in 3 1/2- to 6-quart slow cooker. Cover and cook on “low” heat setting 7 to 8 hours (or “high” heat setting 3 to 4 hours) or until vegetables are tender. Stir in shrimp. Cover and cook on “low” heat setting about 1 hour or until shrimp are pink and firm. Serve jambalaya with rice.
