Orange Whole-Wheat Pancakes
You will flip over these hearty and healthy pancakes. The hint of orange flavor will surprise your tongue. Feel free to mix raisins or dried cranberries into the batter just for a nice change. These will become an old favorite.
Ingredients
For 8 people
- 3 egg whites
- 1 cup(s) orange juice
- 1/3 cup(s) unsweetened applesauce
- 1/4 teaspoon(s) orange extract
- 1 1/4 cup(s) whole-wheat flour
- 2 tablespoon(s) sugar
- 2 teaspoon(s) baking powder
- 1/2 teaspoon(s) salt
- 1/2 cup(s) orange marmalade
Directions
In a blender, place the first four ingredients. Cover and process until smooth. In a bowl, combine the flour, sugar, baking powder and salt; make a well. Add orange juice mixture; stir just until moistened.
Pour batter by 2 spoonfuls onto a hot griddle coated with nonstick cooking spray. Turn when bubbles form on top of pancake and cook until second side is golden brown. Serve with marmalade.
