Penne Carettiera
A "penne" for your thoughts? How about for your belly instead! Talk about a clean, quick dish. This penne pasta is pleasing, not to mention, easy as can be. Dinner is served!
Ingredients
For 4 people
- 1/2 cup(s) Diced fresh mozzarella
- 1/2 cup(s) Diced vine ripe tomatoes, with pulp and seeds removed
- 3/4 cup(s) extra virgin olive oil
- 1/10 teaspoon(s) salt
- 1/10 teaspoon(s) fresh cracked black pepper
- 1 tablespoon(s) Parmesan Reggiano, grated
- 16 ounce(s) penne pasta, cooked al dente
- 1/2 cup(s) fresh basil, julienne
Directions
Combine in a bowl mozzarella, tomatoes, olive oil, salt and pepper. Incorporate thoroughly and let stand at room temperature. Meanwhile, cook pasta. Drain pasta and place in large bowl. Fold in cheese/tomato mixture; mix well. Add Parmesan liberally, to taste. Top with basil and serve at room temperature.
