Pineapple Rice
Surely not another boring rice dish, the flavor-packed pineapple and green onions make this rice a great side dish for Asian and tropical inspired meals. Serve with chicken, fish or lamb.
Ingredients
For 6 people
- 1 cup(s) brown rice
- 2 teaspoon(s) oil
- 2 garlic cloves, minced
- 1 1/2 teaspoon(s) grated fresh ginger
- 1/2 teaspoon(s) turmeric
- 1/2 teaspoon(s) salt
- 2 1/2 cup(s) water
- 1 cup(s) pineapple chunks
- 1/4 cup(s) chopped scallions
- 1/2 cup(s) chopped cashews
Directions
In a medium saucepan with a tight fitting lid, combine the rice, oil, garlic, ginger, turmeric and salt. Saute for a minute or two, stirring constantly to prevent sticking. Add the water and bring to a boil. When the water boils, reduce the heat to low, cover and simmer for about 45 minutes, until the water is absorbed and the rice is tender. Stir in the pineapple, scallions and cashews.
