Pizza Crust in Salad
You can combine the best of both worlds... pizza and salad! This easy recipe allows you to do this seemingly unthinkable task in several seamless steps.
Ingredients
For 2 people
- 4 ounce(s) baked pizza crust, cubed
- 1 1/2 cup(s) diced tomatoes
- 1/2 cup(s) thinly sliced fresh basil
- 1/2 cup(s) bottled Italian dressing, divided
- 1 small green bell pepper, chopped
- 4 ounce(s) diced fresh mozzarella cheese
- 1 3/4 ounce(s) sliced pepperoni
- 7 ounce(s) arugula, stemmed
Directions
- Toss pizza crust, tomatoes, basil and 1/4 cup dressing in a large bowl. Let stand 5 minutes.
- Mix in bell pepper, cheese, pepperoni and arugula. Add remaining 1/4 cup dressing; toss to combine. Season with salt and pepper and serve.
