Pizza Crust in Salad

Ingredients

For 2 people

  • 4 ounce(s) baked pizza crust, cubed
  • 1 1/2 cup(s) diced tomatoes
  • 1/2 cup(s) thinly sliced fresh basil
  • 1/2 cup(s) bottled Italian dressing, divided
  • 1 small green bell pepper, chopped
  • 4 ounce(s) diced fresh mozzarella cheese
  • 1 3/4 ounce(s) sliced pepperoni
  • 7 ounce(s) arugula, stemmed

Directions

  1. Toss pizza crust, tomatoes, basil and 1/4 cup dressing in a large bowl. Let stand 5 minutes.
  2. Mix in bell pepper, cheese, pepperoni and arugula. Add remaining 1/4 cup dressing; toss to combine. Season with salt and pepper and serve.
