Polenta with Shrimp and Mushrooms
What do you get when you cross polenta, shrimp and mushrooms? A downright decadent dish. This is a winning entree for any occasion.
Ingredients
7 large shrimp
1/2 cup cremini mushrooms
3 tbsp. olive oil
1/8 cup Chardonnay wine
1 tsp. fresh garlic
1/8 cup scallions
Salt and pepper to taste
2 small polenta cakes
1 lemon wheel
3 oz. white sauce
Drizzle of basil oil
Methods/steps
Sauté shrimp and mushrooms in olive oil until the shrimp are just pink. Deglaze with Chardonnay. Add garlic, scallions, salt and pepper. Place over polenta. Finish with lemon beurre blanc and basil oil.
