Potatoes & Bell Peppers
This vegetarian dish is much like a hash with the combination of bell peppers and potatoes. It's a great meal for breakfast, lunch or dinner. Plus, it's quick.
Ingredients

- 2 potatoes, blanched, dried, and thinly diced
- 2 teaspoon(s) corn or vegetable oil
- 1/2 cup(s) bell pepper, chopped
- 1/8 tablespoon(s) onions, chopped
- 1/8 teaspoon(s) salt
- 1/8 teaspoon(s) black pepper
Directions
In a heavy, no reactive saucepan, combine all ingredients and sauté until potatoes are browned.
