Potato-Veggie Casserole
Having trouble getting the kids to eat their veggies? Never fear. This potato veggie casserole disguises them so well they'll never know the difference.
Ingredients
For 6 people
- 1/2 stick butter
- 1 can cream of mushroom
- 10 3/4 ounce(s) soup can milk
- 2 cup(s) Cheddar cheese, shredded
- 1 cup(s) Onions, diced
- 1 cup(s) Mushrooms, sliced
- 32 ounce(s) bag frozen hash browns
- 16 ounce(s) bag frozen mixed veggies, cauliflower, carrot and broccoli
Directions
Melt butter, soup, milk, and cheese into sauce; season with salt and pepper to taste and stir in onions and mushrooms. Into a 13x9x2 inch casserole dish empty the bag of frozen hash browns and the bag of frozen mixed veggies Pour cheese sauce on top of frozen veggies and potatoes. Sprinkle additional 1/2 to 1 cup cheese on top and bake at 350 degrees for 45 minutes to an hour.
