Quiche of Zucchini
To give this gourmet quiche even more of an edge, top with sliced tomatoes and sprinkle with freshly grated Parmesan cheese.
Ingredients
For 8 people
- 8 ounce(s) zucchini, grated and well drained
- 1 medium onion, chopped fine
- 8 ounce(s) sharp cheddar cheese, grated
- 4 ounce(s) Swiss cheese, grated
- 4 eggs, beaten
- 1/2 cup(s) half-and-half
- 1/8 cup(s) flour
- 1/4 teaspoon(s) salt
- 1/8 teaspoon(s) pepper, to taste
Directions
Sauté onion in butter until golden.
Mix cheese with zucchini and onion.
Add the remaining ingredients.
Mix well.
Pour into a 9 in. greased pie plate and bake at 350 degrees for about 30-35 minutes or until center is set. Serve with a salad for a light meal.
