Quick Arugula & Fennel Salad

Ingredients

  • 5 cup(s) arugula (4-5 cups)
  • 1 fennel bulb, washed and sliced
  • 1 1/2 cup(s) mandarin oranges
  • 1/2 cup(s) nuts (0.25-0.5 cup)
  • 2 tablespoon(s) apple cider vinegar
  • 2 tablespoon(s) extra virgin olive oil
  • 1/8 teaspoon(s) ground black pepper
  • 1/8 teaspoon(s) salt

Directions

Put arugula in large bowl. Sprinkle on the fennel, oranges and nuts. Mix together the oil, vinegar, salt and pepper. Pour over salad and serve.
