Quick Spinach Salad with Garlic Dressing

Ingredients

For 6 people

  • 1 Salad:
  • 1 fresh spinach
  • 1 onion
  • 1 celery
  • 1 hardboiled egg
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 capers
  • 1 Dressing:
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) pepper
  • 1/4 teaspoon(s) cayenne
  • 1/4 teaspoon(s) dry mustard
  • 2 tablespoon(s) vinegar
  • 1 tomato, pureed
  • 1 dash(es) Tabasco sauce
  • 1 cup(s) canola oil
  • 3 1/2 cloves garlic, crushed

Directions

  1. Salad:
  2. Boil eggs and chop.
  3. Wash spinach well and dry, tear into small pieces.
  4. In a large bowl combine spinach, onion, celery, eggs, salt and pepper and chill well.
  5. Just before serving pour garlic dressing over salad and toss lightly.
  6. Garnish with capers.
  7. Dressing:
  8. Combine all ingredients and puree with a blender.
