Ramen Egg Drop Soup

Ingredients

- 15 ounce(s) can chicken broth
- 12 floz water
- 1 package Ramen noodles, no seasoning
- 2 large eggs, beaten or egg substitute equivalent
- 10 3/4 ounce(s) can of spinach
- 1 tablespoon(s) reduced sodium soy sauce
- 2 tablespoon(s) scallions, sliced
Directions
Bring broth and water to boil, add noodles and cook 3 minutes. Add eggs and cook 30 seconds; do not stir. Add spinach and simmer 1 minute. Add soy sauce and scallions; simmer 1 minute.
