Salmon in Cucumber Sauce
This cool and creamy cucumber sauce goes perfectly well with fresh salmon. To serve, place chilled salmon fillets on lettuce-lined plates. Spoon Cucumber Sauce over salmon. Tasty and healthy, a perfect match!
Ingredients

- 8 floz water
- 1/2 teaspoon(s) chicken or fish bouillon granules
- 1/8 teaspoon(s) black pepper
- 4 fresh pink salmon fillets (about 3 oz. each)
- 1/2 cup(s) chopped seeded peeled cucumber; For Cucumber Sauce
- 8 ounce(s) plain “low”-fat yogurt; For Cucumber Sauce
- 2 tablespoon(s) sliced green onion; For Cucumber Sauce
- 2 tablespoon(s) fat-free salad dressing or mayonnaise; For Cucumber sauce
- 1 tablespoon(s) chopped fresh cilantro; For Cucumber Sauce
- 1 teaspoon(s) Dijon mustard; For Cucumber Sauce
- 2 cup(s) shredded lettuce; For Cucumber Sauce
Directions
Combine water, bouillon granules and pepper in large skillet. Bring to a boil over “high” heat. Carefully place salmon in skillet; return just to a boil. Reduce heat to medium-low. Cover and simmer 8 to 10 minutes or until salmon begins to flake when tested with fork. Remove salmon. Cover and refrigerate. For Cucumber Sauce, combine cucumber, yogurt, onion, salad dressing, cilantro and mustard in small bowl; cover and refrigerate.
