Sautéed Sea Scallops
The sea is calling your dinner plate! The sweetness of corn is a perfect complement to the delicate flavor of scallops. Wonderful and from the water.

Ingredients
3 cups fresh corn
Salt
Sugar
1/2 cup heavy cream
Cayenne pepper
12 slices bacon
12 large scallops
Methods/steps
Simmer corn in water with a little salt and sugar until tender.
Drain, saving the liquid, and puree corn in food processor.
Add a little corn liquid to puree if needed. Add heavy cream.
Put in saucepan over medium heat, stirring constantly, until thickened.
Correct seasoning with salt, sugar and cayenne.
Fry bacon and sauté scallops.
Put corn sauce on plate and top with bacon, then scallops
