Savory Fettucine

Ingredients
For 4 people
- 6 ounce(s) pancetta
- 2 cup(s) wild mushrooms
- 1/2 cup(s) roasted pignoli nuts
- 1 ounce(s) dried porcini mushroom, hydrated
- 1 tablespoon(s) shallots, fine chop
- 4 floz brandy
- 16 tablespoon(s) heavy cream
- 4 cup(s) cooked fettuccine noodles
- 1/3 tablespoon(s) Parmesan cheese
Directions
1. Sauté pancetta.
2. Add, stirring after each addition, wild mushrooms, nuts, porcinis and shallots.
3. Add brandy and cream.
4. Cook until reduced; add prepared pasta. Toss.
5. Finish with a liberal sprinkle of Parmesan cheese.
