Shrimp, Artichoke and Tomato Pasta


For 4 people

  • 6 ounce(s) angel hair pasta
  • 2/3 tablespoon(s) extra virgin olive oil
  • 1 cup(s) sliced mushrooms
  • 1 cup(s) sliced, raw onion
  • 1/4 cup(s) black olives
  • 4 cloves garlic
  • 14 ounce(s) (1 can) quartered artichoke hearts
  • 2 cup(s) grape tomatoes
  • 6 ounce(s) feta crumbles
  • 1/2 cup(s) fresh basil, chopped
  • 1 teaspoon(s) black pepper
  • 12 ounce(s) shrimp


Cook pasta according to package directions. Heat oil in a large nonstick skillet. Add onions and sauté 10 minutes or until golden brown. Add garlic and shrimp; cook 2 minutes. Add artichokes and cook 2 more minutes. Remove from heat, add drained pasta, tomatoes, olives, basil and black pepper. Stir to combine and serve.
