Shrimp with Polenta

This is the Italian version of Shrimp and Grits. It has lemon and mushrooms to brighten and bring flavor to the dish.  


Shrimp with Polenta

Ingredients

For 2 people

  • 7 large shrimp
  • 1/2 cup(s) Baby Bella mushrooms
  • 3 tablespoon(s) olive oil
  • 1 floz white wine
  • 1 teaspoon(s) fresh garlic
  • 1/8 cup(s) scallions
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to taste
  • 1 1/3 cup(s) 2 small polenta cakes
  • 1 lemon wheel
  • 3 ounce(s) lemon white sauce

Directions

1. Sauté shrimp and mushrooms in olive oil until the shrimp are just pink.
2. Deglaze with wine.
3. Add garlic, scallions, salt and pepper.
4. Place over polenta.
5. Finish with lemon sauce.
