Soymilk Pancakes
Oh say can you see these soy pancakes on your morning menu? If you prefer the company of soymilk over traditional milk, flip over these flapjacks. They taste every bit as good as the real deal but with a healthy twist.
Ingredients
For 1 people
- 1/2 cup(s) flax seeds
- 3 cup(s) vanilla-flavored soy milk
- 2 tablespoon(s) honey
- 1 teaspoon(s) vanilla extract
- 2 tablespoon(s) melted butter
- 4 teaspoon(s) baking powder
- 1/4 teaspoon(s) salt
- 1 teaspoon(s) cinnamon
- 1/4 teaspoon(s) nutmeg
- 8 tablespoon(s) flax seed meal
- 1/4 cup(s) soy flour
- 1 3/4 cup(s) whole wheat pastry flour
- 1 Non-fat cooking spray (for griddle)
Directions
Grind flaxseed in food processor, coffee grinder, blender, etc. until fine and almost pasty. Combine wet ingredients in microwaveable container and microwave on high for 1 minute. Combine dry ingredients in bowl, then combine wet ingredients and melted butter. Blend wet ingredients and dry ingredients and fry on griddle.
