Spanish Tomato Soup Salad
You see tomato... we say, wait until you try this refreshing "salad." Made with a slew of fresh vegetables, the ingredient that really brings the great taste home is the vegetable juice.
Ingredients
For 4 people
- 3 medium tomatoes, peeled, chopped
- 1/2 cup(s) cucumber, seeded, chopped
- 1/2 cup(s) green pepper, chopped
- 2 green onions, sliced
- 2 cup(s) low-sodium vegetable juice cocktail
- 1 tablespoon(s) lemon juice
- 1/2 teaspoon(s) basil, dried
- 1/4 teaspoon(s) hot pepper sauce
- 1 clove garlic, minced
Directions
In large mixing bowl, combine all ingredients. Cover and chill in the refrigerator for several hours.
