Spicy Black Bean Soup
Feeling a little spicy tonight? This soup has a wonderful combination of spices and black beans, especially perfect on a winter night! Serve it with some sour cream to help cool down the heat.
Ingredients
For 9 people
- 2 cup(s) black beans, washed
- 10 cup(s) water
- 2 cup(s) ham, chopped
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 cup(s) shredded carrots
- 1 (14.5 oz.) can of diced tomatoes
- 1 tablespoon(s) minced garlic
- 4 teaspoon(s) garlic powder
- 4 teaspoon(s) parsley, dried
- 2 teaspoon(s) salt
- 1 teaspoon(s) celery salt
- 1 teaspoon(s) Worcestershire sauce
- 2 chicken bouillon cubes
- 1 bay leaf
- 1/2 teaspoon(s) ground black pepper
- 1/2 teaspoon(s) ground mustard
- 1/4 teaspoon(s) dried oregano
- 1/4 teaspoon(s) ground cayenne pepper
- 1/4 teaspoon(s) dried thyme
Directions
In an eight quart stock pot, add rinsed black beans, water, ham, onion, celery, carrots, diced tomatoes, minced garlic, garlic powder, parsley, salt, celery salt, Worcestershire sauce, bouillon cubes, bay leaf, pepper, mustard, cayenne pepper, oregano and thyme. Cover and bring to a boil. Reduce heat and simmer for 2 hours. Discard bay leave and serve.
