Sugarless Nut Macaroons

C stands for cookie, and M stands for magnificent macaroons, a welcomed departure from the typical sweet treat chock full of sugar. Enjoy them without any guilt.

Sugarless Nut Macaroons


For 1 people

  • 2 cup(s) quick cooking oats
  • 6 teaspoon(s) granulated artificial sweetener
  • 1/4 teaspoon(s) salt
  • 2 teaspoon(s) vanilla extract
  • 1/3 cup(s) vegetable oil
  • 1 egg
  • 1/2 cup(s) chopped pecans


Preheat oven to 350 degrees.
Combine oats, sugar, salt, vanilla and oil. Stir well.
Add beaten egg and chopped nuts and mix well.
Measure one teaspoonful and pack on the spoon. Pat out to make a round cookie or egg shape. Place on un-greased cookie sheet. Bake 15 minutes. Let cool.
