Superb Eggs Benedictine
A favorite for breakfast, lunch or brunch, these superb eggs Benedictine are to die for. Make it a staple for your a.m. ritual.
Ingredients
For 4 people
- 8 eggs
- 1 butter
- 1/2 teaspoon(s) salt
- 1/8 teaspoon(s) white pepper
- 4 English muffins
- 8 slices Canadian bacon or 4 slices ham
- 16 tablespoon(s) hollandaise sauce
Directions
Split butter, and toast the English muffins. Cut the ham slices in halves to fit the muffins, or fry the Canadian bacon. Poach the eggs in a pan with boiling water into which a teaspoon of white vinegar and a half tsp of lemon pepper marinate has been added. Place ham or bacon on muffins and eggs on top of ham. Cover with Hollandaise Sauce.
