Sweet Marinated Tomatoes


For 8 people

  • 4 medium size ripe sliced tomatoes
  • 1/4 cup(s) good quality red wine vinegar
  • 3 tablespoon(s) water
  • 2 tablespoon(s) extra virgin olive oil
  • 1 tablespoon(s) fresh chopped parsley
  • 1 teaspoon(s) dried Italian seasoning
  • 1 teaspoon(s) onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1/4 teaspoon(s) fresh ground pepper
  • 1 dash(es) salt


  1. Arrange tomato slices in a large shallow container. Combine the red wine vinegar, water, oil, parsley, Italian seasonings, onion, garlic and pepper in a bowl and whisk it all together well.
  2. Pour the marinade over the tomatoes. Cover and chill for approximately 8 hours or overnight. Place in a decorative bowl and sprinkle with some parsley.
