Tabooli Salad

Ingredients
For 4 people
- 1/2 cup(s) cracked wheat or bulgur wheat
- 6 floz water
- 8 tablespoon(s) chopped parsley
- 4 tablespoon(s) chopped fresh mint
- 1/4 cup(s) chopped scallions
- 1 tomato, diced
- 1 cucumber, peeled seeded and diced
- 1 green pepper, diced
- 1/2 head iceberg lettuce, shredded (1 shredded head romaine is ok too)
- 1 tablespoon(s) salt
- 3 tablespoon(s) lemon juice
- 3 tablespoon(s) olive oil
Directions
Soak cracked wheat in water for 1 hour or until tender. Squeeze out excess water from wheat. Add all vegetables and tomato. Toss. Mix salt, lemon and olive oil. Add to salad.
Ready in 1ΒΌ hour
