Taco Casserole

Ingredients

  • 16 ounce(s) lean ground beef
  • 1 (27 oz.) canned dark red kidney beans, drained and rinsed
  • 1/2 cup(s) onions, chopped
  • 1 cup(s) frozen corn, thawed
  • 7 1/2 teaspoon(s) low-sodium taco seasoning mix
  • 1/4 cup(s) low-fat cheddar cheese, shredded
  • 1 3/4 cup(s) no-salt-added tomato sauce
  • 2 ounce(s) baked tortilla chips, crushed

Directions

Preheat oven to 400. Prepare a 11" x 7" casserole dish with cooking spray; set aside. In a large saucepan, cook beef and onions until meat is no longer pink. Add taco seasoning mix, tomato sauce, kidney beans, and corn. Simmer for a ten minutes. Spread mixture into prepared dish. Sprinkle top evenly with cheese and tortilla chips. Bake for 20 minutes, or until heated through.
