Two-Cheese Chicken Chili Nachos

This is nacho ordinary appetizer. This spicy finger food has not one cheese, but two, complemented by sour cream and cream of chicken soup to add a velvety texture and extra "energy" to this savory chili dish.


Two-Cheese Chicken Chili Nachos

Ingredients

For 1 people

  • 4 chicken breasts, boiled and shredded
  • 16 ounce(s) shredded cheese, cheddar and Colby (one package of each)
  • 14 1/2 ounce(s) to 29 ounces spicy chili beans
  • 2 cup(s) sour cream
  • 1 can of cream of chicken soup
  • 1 3/4 cup(s) canned diced tomatoes with green chilies
  • 9 tablespoon(s) diced chilies or jalapeƱos (1 small can)
  • 16 ounce(s) to 32 ounces nacho cheese Doritos (1 - 2 bags)

Directions

  1. In large pot add sour cream, soup, tomatoes, chilies, and chicken. Let simmer 10-15 minutes. Layer baking dish with smashed Doritos, then pour chicken mixture on top.
  2. Next spread half an 8 oz. package of cheese, then add cans of beans, and top with remainder of cheese.
  3. Bake at 350 degrees for 20-30 minutes until cheese is melted.
  4. Serve with additional Doritos.
