Veggie Pods
Grated veggies mixed with whole wheat flour form pancake-like pods for a veggie side that can't be "beet." They're colorful and delicious, and they are packed with nutrients.
Ingredients
For 4 people
- 1 cup(s) shredded potatoes
- 1/3 cup(s) shredded carrots
- 1/3 cup(s) shredded zucchini
- 1/3 cup(s) shredded parsnips
- 1/3 cup(s) shredded beets
- 3 tablespoon(s) stone ground whole wheat flour
- 1/2 teaspoon(s) garlic powder
- 1 salt and pepper, to taste
- 2 tablespoon(s) extra-virgin olive oil (for pan frying)
Directions
Mix all ingredients by hand in a large bowl. Take 1/4 cup scoops and form into small pancake-like "pods". Pour oil into the pan. Heat the oven to hot and add some pods, being careful not to crowd the pan. Reduce the heat to medium-high and cook the pods until crispy and golden brown on each side, about 3 minutes per side. Serve.
