Slice zucchini thin (do not peel). Dice onion. Add oregano, basil, garlic powder and parsley flakes; mix well. Beat eggs until lemon colored. Add oil. Add pancake mix. Mix with zucchini. Put into 9-inch pie plate. Bake at 350 degrees F for about 1 hour until brown.
