Beef and Potato Soup
A hearty beef and potato soup that's rich enough to warm the soul is the perfect antidote to frightening winter weather. This dish can be kept warm in a crockpot while you go out and play in the snow, ready to soothe you on your return.
Ingredients
For 1 people
- 3 1/2 cup(s) new potatoes, small dice (about 1 pound)
- 32 ounce(s) sautéed filet mignon, small dice
- 2 red bell peppers, roasted, small dice
- 1 large leek, small dice
- 3 1/3 cup(s) corn (1 lb bag)
- 12 cup(s) chicken stock
- 1 dash(es) salt, to taste
- 1 dash(es) black pepper, to taste
- 1/8 cup(s) olive oil
- 1 cornstarch
Directions
Parboil potatoes; cool and set aside. Sauté filet tips; drain and set aside. Sauté red peppers and leek in olive oil until tender. Add corn and potatoes, then add chicken stock, cream, salt and pepper. Bring to a boil; add cornstarch to thicken.
