Black Eyed Peas
This county cooking side dish is a true crowd-pleaser. This quick and easy side dish is great with just about any protein.
Ingredients
For 6 people
- 1 medium onion, chopped
- 2 tablespoon(s) vegetable oil
- 8 ounce(s) chopped cooked ham
- 1 to 2 garlic cloves, minced
- 3 3/4 cup(s) black-eyed peas, rinsed and drained
- 1 3/4 cup(s) chicken broth
- 1 teaspoon(s) rubbed sage
- 1/2 teaspoon(s) dried thyme
- 1/2 teaspoon(s) ground black pepper
- 1 chopped tomatoes
- 1 sliced green onions
- 1 dash(es) pepper sauce, if desired
Directions
Heat oil in a medium saucepan; stir/sauté onion over medium-high heat for 3 minutes. Stir in ham and garlic; sauté 3 minutes. Stir in peas and the next 4 ingredients; bring to a boil; decrease heat, and simmer, stirring occasionally, 20 minutes. Adjust seasoning to taste with salt/pepper.
Serve topped with chopped tomatoes, sliced green onions and pepper sauce.
