Savor Some Side Dishes
Side dishes can be time-consuming, but they're worth the effort to create a balanced and cozy holiday feast! Fall harvest produce like butternut squash is delicious when simply split in half, basted with a little butter, and baked in the oven. Zucchini is another great roasted vegetable when flavored with anything from Italian seasoning to bacon and parmesan. You can even try making a noodle kugel to create a hearty casserole that's great as a meal in itself!
Roasted Zucchini with Bacon
- 4 zucchini, split lengthwise
- 8 slices of bacon
- 1 tsp. minced garlic
- 1/4 cup grated parmesan cheese
- 1 tsp. ground black pepper
- 1/2 tsp. salt
Preheat oven to 375.
Lightly grease a baking sheet and place zucchini skin side down. Mix together garlic, salt, pepper, and parmesan cheese. Sprinkle cheese mixture on top of each zucchini and lay a slice of bacon over each half.
Bake for 15 minutes until bacon is sizzling. Increase temperature to 500 and broil until bacon crisps without burning.
