Why not opt for homemade salads - and we're not talking about your typical lettuce and tomato? For a southwestern spin, combine black beans, corn kernels, diced tomato and a small amount of salsa in a container. Or make it Italian with spiral noodles, diced tomato, chopped mozzarella cheese, olive oil, basic and a trace of balsamic vinaigrette. For some Asian flare, combine some udon noodles, mushrooms, carrots, baby corn, water chestnuts, sesame oil, rice wine vinegar and soy sauce. Regardless of what staple you choose for your child's lunch, always be sure to include an apple - or some other piece of fruit - every day.
